Roger Roessler embarked on his food and wine career in 1971 with the opening of the Hatchcover Steakhouse in Silicon Valley, eventually establishing a presence with over 20 restaurants across several states. He achieved notable success with the Olde Tymer's Cafe in Durango, Colorado, which held the title of "Best Burger" for four decades.His passion for wine led him to establish Roessler Cellars Winery in Sonoma, California in 2000, where he produced award-winning Pinot Noir for the past two decades. Post-Covid he made the decision to enter the next chapter of his life in Vietnam. He currently resides in Hoi An, where he focuses on the Opal Moon — his latest project, which he fondly calls "the restaurant of his dreams." The OM blends global ingredients with locally sourced produce, meats, and seafood, in a casual yet upscale environment on the banks of the Thu Bon River. Delivering exceptional dining experiences has been his lifelong passion for over 6 decades.Roger, along with Chef Khoi Nguyen and Manager Ai Vy Nguyen, is dedicated to crafting memorable meals with high-quality international ingredients like Italian delicacies and Japanese Wagyu beef, paired with the finest local produce.
